Ingredients
1 pound fresh Peruvian sea bass, cleaned and scaled
1/2 cup white onion, diced
1/2 cup white apple, diced
1/2 cup fresh cilantro, chopped
1/2 cup fresh pineapple, diced
1/4 cup fresh lime juice
1 tablespoon olive oil
1 teaspoon sea salt
Instructions
1. In a large bowl, combine sea bass, onion, apple, cilantro, pineapple, lime juice, olive oil and salt. Mix well.
2. Cover and refrigerate for at least 2 hours, or overnight.
3. Serve chilled.

-1 tablespoon olive oil
-1 teaspoon salt
-1 teaspoon black pepper
-1 tablespoon cilantro, chopped
-1 tablespoon fresh mint, chopped
-1 cup white wine
-1 cup chicken broth
-1 cup fresh cilantro, chopped
Instructions:
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a large bowl, combine fish, red onion, red bell pepper, jalapeno, lime juice, olive oil, salt, and black pepper.
3. Spread mixture in a single layer on a baking sheet. Bake for 15 minutes, or until fish is slightly cooked.
4. Remove from oven. In a small bowl, combine cilantro, mint, white wine, chicken broth, and cilantro.
5. Drizzle mixture over fish.
